We are back from vacation and while it was a lot of fun, I’m ready to get back on a schedule. I know I have said this more than once, but menu planning is my number one sanity saver! If you haven’t tried it yet, I challenge you to give it three weeks. You will be amazed at the time, money and stress you will save.
- Monday - Top your own pizza, raw veggies and dip, fruit salad
- Tuesday - Fettucine alfredo with chicken and broccoli
- Wednesday - Plans TBD
- Thursday - Mini meatloaf, mashed red potatoes, green beans
- Friday - General Tso’s chicken and rice

If you have not tried menu planning yet, I would like to challenge you to do so this week. Actually try it for 3 weeks and you will be amazed at how much smoother the week runs and how much you save on groceries. Each Sunday I take a quick peek in my cabinets and freezer to get a quick idea of what is there and what needs to be used up. Then I take 5 minutes and ask each family member if there is anything specific they want for dinner this week - most requests are honored. Next I grab a sheet of paper and write down the days of the week, fill in the events that I know will affect our dinner plans, add in the requests, then fill in the blanks. The whole process takes me less than 30 minutes and saves me so much time during the week.
Here is my menu for the week:
- Monday - Spaghetti and meatballs
- Tuesday - Shrimp lo-mein
- Wednesday - Hamburgers on the grill and 7 Layer Salad
- Thursday - Shredded taco chicken in the crockpot for tacos or salad
- Friday - Breakfast for dinner - waffles, sausage and fruit

This week’s Menu Plan Monday will be pretty much a repeat of last week as Tuesday and Wednesday nights were spent in the hospital with my youngest and Thursday night I was too exhausted to cook so my husband took over.
- Monday - Kielbasa, pierogies, and green beans
- Tuesday - BLT sandwiches, raw veggies and fruit salad
- Wednesday - Catalina Taco Salad
Thursday - Tropical Chicken Foil Packets on the grill with rice
- Friday - My son’s 11th birthday party so we’ll order pizza
We had a family get together today and we all brought a dish or two. I tried a new recipe for potato salad and it was sooo good. It is a Rachael Ray recipe for Balsamic Potato and Green Bean salad. I did not have balsamic vinegar so I substituted Rice Wine vinegar, added some crumbled bacon, and it was still so tasty.

I knew that if I skipped Menu Planning last week that I was doomed. And I was, but with it being such a funky week anyhow, it just didn’t matter. This week is going to be crazy and if I don’t do my planning, it could get ugly. My son is doing ice hockey camp from 9-4 each day this week, my middle daughter has gymnastics 3 mornings and Friday afternoon, I teach gymnastics 3 mornings, and my youngest is going to art camp from 9-3 on Tuesday, Wednesday and Thursday. In other words, I will be driving my taxi service all week. I really don’t mind, because these are all activities they enjoy and do with friends - and isn’t that what summer is all about?
So, the menu has been planned and we did the grocery shopping yesterday.
- Monday - Hamburger Helper and a Salad (my son’s choice - I’ll stick with the salad)
- Tuesday - Kielbasa sausage, pierogies, and steamed veggies
- Wednesday - Catalina Taco Salad
- Thursday - Tropical Chicken Foil Packets on the grill with rice
- Friday - it’s my birthday and I’m not cooking. We’ll probably go out.
