After a very busy, social weekend, I feel like I am just playing catch up today. Normally I get ready for the week ahead on Sunday evenings, but we were celebrating 4th of July with family and friends until way in to the evening. Then I had to teach at the gym this morning so I am just now really getting things knocked off my to-do list.
Normally I do a Menu Plan Monday post, but we have so many leftovers from the weekend, I am just going to point my crew in the direction of the fridge and say “good luck” if they tell me they are hungry.
And I thought about getting motivated and joining in on the Monday Motivation post at eMoms at Home, but my list is too long and I don’t know if I can hold myself to any sort of leverage today. I think I am just going to work until I drop - whatever doesn’t get done tonight will have no choice but to wait until tomorrow.
The blogging birthday bash at my other blog, Essential Keystrokes, was a hit and I just posted the list of winners. Now it’s time for me to enter a contest! The ladies at Pinks and Blues Girls Blog have another fantastic set of prizes to give away. I love the Vera Bradley bag and since I am such a purse girl, how could I pass it up? Plus, there is a Coconut Body Butter from The Body Shoppe to go with it - one of my favorite scents.
Here’s hoping that the rest of the week can be relatively quiet and I can get caught up!

I don’t know about the rest of you, but I could seriously live on fresh fruit and veggies for the rest of the summer! I missed the Farmer’s Market on Saturday, so I’ll have to go Wednesday to get what I need this week.
- Monday - I think we are going out to lunch, so dinner will be light! It may even be a bowl of cereal.
- Tuesday - Chicken Fajitas
- Wednesday - it’s my husband’s birthday so we’ll have Steak on the grill, baked potatoes, and a fresh salad
- Thursday - Fresh vegetable pasta primavera, garlic bread
- Friday - We’re having a little get together and I am planning on making meatballs, bbq pork and coleslaw, getting buffalo wings, veggie tray, chips and salsa, and a cake.

I hope everyone had a Happy Father’s Day. We went to my parent’s house for dinner and had a wonderful, but very simple meal with family. My Mother is a big gardener and a great cook so everything is super fresh. She made grilled flank steak; fresh, steamed green beans; garlic and rosemary roasted new Yukon Gold potatoes; marinated cucumber, onion and tomato salad; and we finished it off with fresh fruit salad and ice cream. YUM.
We have a pretty relaxed week - no evening activities at all this week. Here is what’s on the menu:
- Monday - Chinese Take Out - it just the girls tonight so that is our treat
- Tuesday - Kielbasa, Pierogies, and fresh veggies
- Wednesday - Create your own pasta - pick sauce and toppings
- Thursday - Quesadillas with chicken, cheese and veggies
- Friday - Pizza

I missed getting to the Farmer’s Market on Saturday morning, so I will have to go to the Wednesday afternoon market this week to get all my fruits and veggies. Once we hit market season, I really can’t bring myself to buy supermarket produce unless it is an emergency.
It is also our last week of evening sports practices. For the rest of the summer we will have gymnastics practice a few mornings a week with some arts and craft camps and hockey camps sprinkled in.
- Monday - Pierogies, peas and chicken nuggets (for the picky ones)
- Tuesday - Lasagna, salad, garlic bread
- Wednesday - Grill night - hamburgers and hot dogs on the grill, corn on the cob, french fries
- Thursday - Oven fried chicken, egg noodles, carrots
- Friday - Pepperoni bread, salad
The Pepperoni bread is so easy to make. Buy two loaves of frozen bread dough and let them defrost. Roll out bread with rolling pin on slightly greased surface until flat. Place pepperoni slices all over the rolled out dough - leave about 1/2″ on one side so you can seal it. Sprinkle with mozzerella cheese until pepperoni is covered. Roll dough up lengthwise (like a jelly roll) and seal with a bit of water. Repeat with second loaf. Place both loaves on a baking sheet (one with edges works best) and let rise. Place in oven on 350 for 30 minutes. I put a piece of aluminum foil loosely on top to prevent burning. Remove foil and let cook addition 10-15 minutes. Slice and serve. This is great party food - but my kids request it as dinner all the time. You can really make it with whatever fillings you like. We have done ham and cheddar before.

Today is the last full day of school for my kids and then they have half days until Thursday. It is going to be a pretty busy week, but a little planning and we will make it through with no problem.Do any of you get the magazine from Kraft Foods called Food & Family? If not, I’m pretty sure it is still a free subscription that comes 4 times a year. It always has plenty of fun recipe ideas - many that the kids can help with. I also plan on keeping plenty of simple mixes - like blueberry muffins - in my pantry this summer. My 8 year old LOVES to cook and making a batch of muffins is more enticing to her than playing with toys much of the time.
