Menu Plan Monday - June 18

I hope everyone had a Happy Father’s Day. We went to my parent’s house for dinner and had a wonderful, but very simple meal with family. My Mother is a big gardener and a great cook so everything is super fresh. She made grilled flank steak; fresh, steamed green beans; garlic and rosemary roasted new Yukon Gold potatoes; marinated cucumber, onion and tomato salad; and we finished it off with fresh fruit salad and ice cream. YUM.

We have a pretty relaxed week - no evening activities at all this week. Here is what’s on the menu:

  • Monday - Chinese Take Out - it just the girls tonight so that is our treat
  • Tuesday - Kielbasa, Pierogies, and fresh veggies
  • Wednesday - Create your own pasta - pick sauce and toppings
  • Thursday - Quesadillas with chicken, cheese and veggies
  • Friday - Pizza

I think pasta is on the menu today, and I’m sure the rest of the week is full of barley and rice or something. *roling eyes*
